Days 1-4

Welcome to my new blog. This blog is going to be quite boring... it is more or less for family so they can encourage me and make sure I am eating healthy.

So the first few vegan days have gone quite well. Yesterday Ben supprised me with meatless bacon bits... it was thrilling. I have also really cut down on refined flours. I eat brown rice and brown pastas. No sweets for me... that's ok though because I can eat Bush's baked beans and those are a delight. Hurray. If anyone reads this and knows of a super fabulous vegan recipe that has little or no refined flour please leave it in a comment. Life is a little crazy right now so I would prefer the more simple recipes.

How am I feeling?
Well I think it is going to take a few weeks before I feel a big difference. I have actually been pretty sore. Sadly, I think this is due to my teaching schedule and the new works out I have been involved in. Unfortunately, I think I will give up the extreme work outs and just keep doing lower impact workouts.

Can anyone pass the tofu?

By the way, what is tofu? and is it good?

  3. I know this really yummy treat that I love. Sliced tomatoes with fresh basil, sprinkled with salt, pepper and virgin olive oil. It's such a treat. And I don't think you can have fresh mozerella, but if you can, it's good with fresh sliced mozerella. Here is another spectacular treat: watermelon sprinkled with Crystal Light ruby-red grapefriut mix or any other dry crystal light mix. It's delicious, and I can eat a watermelon all by myself. Here is another treat I like, well, I guess it's not a treat but a dinner. Quarter some potatoes, sprinkle with linton's dry soup mix, or dry ranch dressing mix, or just some seasoning. Bake them in the oven at 450 for 20 minutes or until crispy. De-lish. I will find some more treats for you.
