A great suprise

Hurray for Friday! Today has been a pretty good day. After school I came home and Ben told me there was a package for me on the kitchen table. I (being a lover of packages) ran into the kitchen to find a box from the one and only Russell Roberts. You may be asking what this has to do with my vegan adventures... but let me tell you, it has everything to do with it. I opened it up and there it was... a wonderful cookbook called, "MY FAVORITE VEGAN COOKBOOK". How excited I am. It has some great recipes in it and I am so excited to try them. One of my favorite things was a few pages on egg substitutes. I will have to post some of the recipes once I have tried them.

Thank you so much Russell. It made my day!

In other Vegan News: I am not yet sure if it is working. I think it will take a few more weeks. I have been vegan now for about 3 weeks and it really isn't too bad, except eating out stinks a lot. I don't mind Rice Milk or soy milk. I generally will not drink them plain though.Rice ice cream is nasty and tastes like pure nastiness. Veggie burgers can be good depending on the brand.

How Am I feeling: Well the first week I was not feeling very good but now I am ok. I am also on a ton of medicines so I have no idea if it is making a difference. The real test will come in a few weeks when I have to go off my medicine for a little ear surgery.

Ok well I am done Yapping. I hope anyone who is bored enough to read this has been enlightened on the life of a vegan.

Grrrr.... Cakes at lunch

I was so excited that today was an early release day. I got home by 2... blissful. I know. When I got to the teachers' lounge for lunch there were seven different cakes on the table along with a variety of cheesecakes... I resisted! It was quite the battle.

I think I have done pretty good so far. I have had a few slip ups here and there but they have been pretty minor. Thank you Rachell for the suggestions. After reading it, I wanted a tomato but we don't have any. Oh well.

I had my first veggie burger on Saturday... it was not too bad.

Anyways, I need to get some cleaning and lesson planning done and finish my deluctible black beans. YUM

Days 1-4

Welcome to my new blog. This blog is going to be quite boring... it is more or less for family so they can encourage me and make sure I am eating healthy.

So the first few vegan days have gone quite well. Yesterday Ben supprised me with meatless bacon bits... it was thrilling. I have also really cut down on refined flours. I eat brown rice and brown pastas. No sweets for me... that's ok though because I can eat Bush's baked beans and those are a delight. Hurray. If anyone reads this and knows of a super fabulous vegan recipe that has little or no refined flour please leave it in a comment. Life is a little crazy right now so I would prefer the more simple recipes.

How am I feeling?
Well I think it is going to take a few weeks before I feel a big difference. I have actually been pretty sore. Sadly, I think this is due to my teaching schedule and the new works out I have been involved in. Unfortunately, I think I will give up the extreme work outs and just keep doing lower impact workouts.

Can anyone pass the tofu?

By the way, what is tofu? and is it good?
